AN EXPERIENCE FOR THE SENSES
We named our restaurant after the beautiful Gorgoli Valley, located 5km south of Mustafapaşa. In the older days, villagers organized summer festivities in this Valley, showcasing their culinary skills in a very relaxed and inspiring setting. Gorgoli Lounge & Eatery aims to honor this heritage by using local products, recipes and technics for formulating an authentic gastronomy experience.
TRADITIONS
Cappadocia’s rich, volcanic soil made it ideal for agricultural production. Distinct climate conditions add complex flavours to the crop. Farming is a difficult way of making a living in Cappadocia but the outcome is definitely worth the efforts.
The region’s early inhabitants nurtured crops with pigeon guano, the longtime secret to Cappadocian agricultural success.
Preserving food for long and harsh winters is similarly important. Drying, pickling, molasses making, cold storing in volcanic caves are still widely used techniques.
Untouched, these agricultural traditions endured for thousands of years. In Gorgoli we are true believers and followers of all such traditions.
